We truly believe freshness is the key. When done right (roasting, storing and brewing), freshly roasted, quality specialty-grade coffee beans - especially roasted in a relatively smaller batches - are simply so much more enjoyable than a commercially roasted, mass produced, big-brand-name coffees. We put our efforts in selecting and purchasing fresh seasonal green coffee in relatively smaller/limited quantities, so even the unroasted green coffee beans that we use, also stay fresh. So, please enjoy them while they are in stock!
We are passionate to offer the best quality coffee to our customers. Also, we are proud to be very meticulous about everything we do. From selecting coffee, preparing, roasting, packaging and cleaning, to communicating, arranging delivery/pickup, handling requests/suggestions and etc., we promise that we will do our best to be more detailed, delicate and meticulous than others.
Although some coffee tend to peak its flavors and aromas later than others, we believe that most roasted coffee beans start to lose freshness somewhere between 3 to 4 weeks after roasting. However, roasted coffee also needs a few days (some coffees take longer, but mostly 2-3 days) of resting. During this time the beans develop their flavors fully while releasing CO2 (thus the one-way valve on the resealable coffee bags) which can add unwanted taste to the coffee.
We wish that you enjoy our coffee right when the aromas and flavors are at the peak! In that sense, we decided that a smaller amount (approx. 7oz/200g) of coffee per bag is more enjoyable while the coffee is at its best. Please consume our coffee fresh, and come back to get some more fresh!
We are currently operating under the Georgia Cottage Food Laws (MADE IN A COTTAGE FOOD OPERATION THAT IS NOT SUBJECT TO STATE FOOD SAFETY INSPECTIONS), which only allows us to sell directly to end consumers within the state. We can sell face-to-face, or ship to an address within the state of Georgia. Free local delivery is available within 5-mile radius from our location in Johns Creek, GA. Otherwise, a pick-up from our location, or shipping ($5 for up to 3 bags, and free for 4+ bags of coffee) will be further arranged.
Although we have plans to accept credit card payments in the future, currently, our preferred method of payment is Zelle, Venmo, and Paypal. We apologize for the inconvenience.
Grinding is the fastest way to start degrading the freshness of roasted coffee beans. We can grind for you, but we highly recommend grinding yourself. Smelling the burst of beautiful coffee fragrance when grinding, is the best part of our coffee brewing process. We do not recommend buying a pre-ground coffee, not just from us, but from anywhere.
A good coffee grinder (does not have to be expensive) usually offers at least 30-50 grind levels/steps, some do over 100+ clicks.. Depending on brewing method, one click of grind level change can make a meaningful difference in the cup. We simply do not wish to take away from you, the freedom and the fun part of experimenting and exploring different grind levels.

We are more than happy to deliver our fresh coffee to customers near us! Our current policy is to offer free delivery within 5 miles of radius from our location in Johns Creek, GA. Please provide your address with the order request form, and we will check if you qualify.
Although traditionally dark roasts were (still are, in some countries/regions) almost exclusively used for espresso. However, light and medium roasts are also a very good and interesting option for espresso. Please be adventurous and try pulling an espresso shot with a light roast, if you have not yet tried. You will need to just make some adjustments to dial in for the different beans. And we think the dialing-in part (with roasting, grinding, water temperature, dose-to-yield ratios, brew time, pressure, and etc., and ultimately tasting) is the most fun part of coffee!
We do prefer roasting light. Not just because it is a trend in specialty coffee, but because we think many quality coffee beans simply have more things (aromas, flavors, etc.) to offer at a lighter roast level. We always try to carry at least one light roast and at least one medium roast. However, some coffee beans do shine best at a dark roast, and we will make sure to share them with you!
It is our policy that we roast your coffee soon after we receive your order. However in rare cases, due to our inventory control, it is possible that the printed roast date on the bag is earlier than your order date. But we promise, that it will never be more than 3 days older than your order date.
Please think those tasting notes as suggestions or guidelines, rather than guaranteed flavors. While seasoned coffee professionals with developed sensory skills and extensive flavor vocabularies, may be able to identify those exact tasting notes, but coffee can taste very different depending on many things. Type of coffee (espresso, drip, french press, Aeropress, hot, iced, etc.) and the brewing method and skills (grinder/dripper used, grind size, water temperature, mineral content, etc.) can make a big impact on the flavors/aromas. The food you pair with the coffee can be a difference maker (just like wines). It can also simply taste different to different people with different taste buds.
Thus, please use those tasting notes as suggestions on how the given coffee should taste and smell like. While we know what we like and what to look for when tasting and evaluating coffee, we do not claim to be expert cuppers. We combine our opinions with the information from the green coffee vendors, farms and experts, when we decide on the tasting notes for the specific coffee. We hope our customers find what they like, and we are here to help!
Most importantly, please do not forget to enjoy/appreciate the natural flavors and aromas that coffee gives us!
Generally, if your coffee is too sour, try grinding finer and use higher temperature water (sometimes we use 98C for a light roast and get good results). If your coffee is too bitter, try grinding coarser and lower water temperature (maybe down to sub-90C, usually works well for darker roasts).
Grinder also have a huge impact on how your coffee tastes, so we would recommend taking some time to research and find a good grinder that suits your needs and budget. But after all, sourcing good fresh coffee beans will be the biggest factor to your cup, and we are here to help!
Our go-to is an iced drip coffee. 16g of nice light roast Ethiopia natural coffee freshly ground using the Fellow Ode Brew Gen 2 grinder (4.1 grind setting). Dripper is usually the Origami, but Kalita 3-hole and Hario V60 are also used sometimes. Bloom 30 seconds and 3 additional pours to 200ml, and cool it down with about 100g of ice. Pour over new ice cubes in a cup, leaving the melted down ice cubes in the carafe/server. You get a nice refreshing cup of iced coffee with aromas of flowers and blueberry!
